Spicy Chicken Burgers You Can Eat Every Night of the Week

I’m a huge fan of summer. There’s something extra special about the brightness and light it brings here in the Pacific Northwest — the warmth that fills your bones and the extra bits of joy that can sneak in every day. Ever since having my son a few years ago, summer has become even more special, since I get to see him too crave being outdoors, soaking in the sun, playing in the garden, running, and walking everywhere, and being outside any chance. While all of us love a good backyard barbecue with friends, my family also is big fans of a simple, every-night grilling routine. Enter: my favorite spicy chicken burgers.

Whether you’re prepping for a Labor Day celebration or looking to make family dinners a little more special, these spicy chicken burgers are perfect for the whole family. If you have little kids (or folks who don’t like heat), just leave the chipotle chiles out. We also love using any leftover meat to roll up into meatballs — perfect for lunch the next day.

Spicy Chicken Burgers

Makes 4 small or 2 large burgers, or 6–8 meatballs

These burgers are packed with flavor no matter how you make them, though I’m partial to a perfectly crisp and juicy lettuce wrap. They’re great with classic burger buns, too — and you won’t want to skip out on the 1 Minute Miracle Sauce on top. Plus, the sauce keeps well for up to a week and is a great veggie dip once your burgers are gone.

For burgers:

  • 1 lb. organic ground chicken
  • 5 chipotle chiles from the can, drained, rinsed, and finely chopped
  • 1 zucchini, shredded and excess water squeezed out
  • 1 poblano pepper, finely chopped
  • 5 sprigs oregano leaves, finely chopped
  • ¼ cup cilantro, chopped
  • 2 teaspoons
  • Dijon mustard
  • 1 teaspoon sea salt
  • ½ teaspoon pepper

For lettuce wraps:

  • 1 head iceberg lettuce
  • 1 zucchini or carrot, shredded (or whatever toppings you prefer)
  • ½ avocado, sliced
  • 1 Minute Miracle Sauce (or any other condiments you like)

Combine all burger ingredients in a large mixing bowl, and mix well. Heat a large skillet over medium-high heat with a drizzle of olive or coconut oil.

Form 2 large or 4 small burgers with your hands, and add to the hot pan. Wait until the first side is browned completely before flipping, approximately 5 to 7 minutes. Flip and cook the other side. While you wait, prep your lettuce wrap ingredients and toppings bar, and assemble burgers as desired.


Makes 4–6 servings


  • 1 cup plain whole-milk
  • Greek yogurt
  • ½ cup fresh dill (or parsley, chives, basil, or tarragon), chopped
  • 1 lemon, juiced
  • Generous sprinkle of both sea salt and pepper

Whisk all ingredients in a bowl until well-combined.
