Conversation Kitchen & Bar inside Thompson Seattle launched dinner service on Oct. 12. Executive chef Kaleena Bliss is highlighting approachable and fresh Northwest dishes on the menu.

Bliss is a Northwest resident who loves locally foraged mushrooms, and you’ll see a lot of those on the menu, including house made Campanelle pasta, and wild mushroom flatbread. Other highlights on the menu this season include Lingcod with sweet potato-miso cream, Kalbi braised beef short rib, and Kabocha squash soup.

“I get inspired being outdoors, and it’s so fun to pair that interest with creating food using the different ingredients that are harvested across the Pacific Northwest,” chef Bliss said in a press release. “I want guests to come to Conversation and feel welcome and excited to be out and about again, and then to leave, bellies full and satisfied.”

In addition to fresh Northwest cuisine, there is an extensive bar program featuring local spirits, beers, and wines, and more top sips from around the world.

Conversation Kitchen & Bar features 65 seats, a heated courtyard for 12 to 20, and bar seating for 12. Valet parking is available for two hours if you spend $25 or more at the restaurant.

Conversation is located at 110 Stewart St., Seattle and open for dinner Tuesday – Saturday, 5-10 p.m., closed Sundays and Mondays.
