Just Poké is adding three new locations to its existing 23 restaurants in the Seattle region this month.
New sites will open in downtown Seattle, West Seattle, and Sammamish later in May. A Mercer Island site recently opened its doors and is currently serving the local community.
Since debuting in 2016, Just Poké has been serving patrons rice- and salad-based poke bowls made on demand, giving customers choice and customization from a selection of eight proteins, 20-plus fresh toppings, and sauces developed in house, a release noted.
Just Poké will have 35 locations throughout the Pacific Northwest by the end of 2023.
